Heading to Ichiran in Shimbashi meant facing a huge line with over an hour wait—just as I was about to give up… I spotted a ramen shop quietly tucked away nearby!! It served incredibly delicious broth ramen. Its name? Ramen Edoichi! A name that evokes Japanese tradition.

Their catchphrase seems to be “Japanese-style broth ramen made with generous, unsparing broth.”

I debated between niboshi (dried sardines) or shellfish broth, but went with niboshi!

The broth has a really strong niboshi flavor—much richer than it looks. It packs a serious punch. I just can’t help but slurp up the broth over and over. Delicious!!!!

For a flavor change, we also offer grape sansho oil and porcini oil. Just a few drops add a deeper, more complex taste. This is delicious too.

Never let the soup get boring! You can feel that determination.
