Today, I’d like to introduce one of my favorite Japanese sweets: castella, and especially the beautifully crafted version made by Ijindo, a long‑established castella shop in Nagasaki. It’s a treat filled with the charm of Nagasaki, and one I’d love for my overseas friends to discover.
Among Japan’s many traditional confections, Nagasaki castella is especially beloved. And even within that category, one variety rises above the rest in quality and craftsmanship: Ijindo’s “Special Gosan‑yaki Castella.”
It comes in an elegant wooden box, giving it the presence of a true luxury gift. I opened the box before taking the photo, so the ribbon looks a bit loose—but of course, it normally comes beautifully tied!

What Is “Gosan‑yaki”?
“Gosan‑yaki” refers to a premium style of castella made with a luxurious ratio of 5 parts egg yolk to 3 parts egg white. Because it contains more yolk than regular castella, it has:
- a richer, deeper flavor
- an exceptionally moist, melt‑in‑the‑mouth texture
It even looks noticeably different from standard castella. This method originated in the Edo period as a high‑class confection enjoyed only by a select few—truly worthy of the name “special.”

What Kind of Sweet Is Castella?
Castella was introduced to Japan by the Portuguese in the 16th century. At the time, Nagasaki was Japan’s only open port and a gateway for international exchange. The Portuguese Pão de Castela gradually evolved into the soft, moist sponge cake that Japanese people love today.Ijindo’s Signature: The Crunchy Zarame
Founded in 1955, Ijindo is a long‑established castella shop cherished by locals. Its name reflects Nagasaki’s history as a port where many foreigners once arrived.
Ijindō’s castella is known for:
- its moist, tender crumb
- the delightful crunch of zarame (coarse sugar crystals) at the bottom
The moment you take a bite, a gentle sweetness spreads softly through your mouth, bringing a nostalgic feeling—even if it’s your first time tasting it. You are sure to enjoy this unique texture and flavor. Personally, I love the zarame so much that I photographed the cake with the sugar side facing up!

Ijindo’s Special Gosan‑yaki Castella is a true piece of edible craftsmanship, filled with Japanese tradition and aesthetic sensibility. It’s something you can proudly present to your friends and say: “This is an authentic Japanese delicacy.” It also makes a wonderful gift.
