A friend from Alberta sent me some seasonal matsutake mushrooms.

In autumn, you often see matsutake mushrooms at the supermarket. While Japanese-grown ones are available, there are also many imports from Canada, China, South Korea, and other countries. The domestically produced ones carry a price tag befitting the king of autumn foods, making them quite hard to justify buying.

You’d love to savor the scent of autumn with matsutake soup or matsutake rice, wouldn’t you?

Matsutake Mushrooms from Canada

I read online that Canadian matsutake are said to have an aroma similar to Japanese matsutake. Japanese matsutake are brown, while Canadian ones are white. But apparently, they belong to the same species of matsutake.

The ones I received were also white and had a strong aroma. What surprised me was their size. They were incredibly large and densely packed. Unfortunately, I couldn’t receive them at the perfect time, and the mushroom top had already opened.

I spent the day enjoying matsutake rice, grilled matsutake, and matsutake soup. Even so, I still had enough matsutake left, so I thinly sliced them and stored them in the freezer.

This week, some German friends are coming over, and I plan to serve them matsutake rice. After all, savoring the flavors of the season is something unique to Japan with its four seasons.
