Mizudango, a water dumpling only possible thanks to Toyama’s famous pure water. It seems to be a true soul food for Toyama locals. I visited the specialty shop “Tokichi“.

Simply good taste
Mizudango. What is it, you might wonder? The ingredients are just rice flour, potato starch, and water. It’s a simple snack served with kinako (roasted soybean flour) sprinkled on top. It seems to be a traditional food from the Kurobe region of Toyama Prefecture and isn’t widely known in other parts of Japan. The fact that it’s only eaten in one specific region of Japan is a nice point to highlight for overseas visitors, istn’t it?
I ordered the simple water dumplings. They came out like this, served in a paper cup. Pretty simple.

Recommended for gluten-free
Made with Toyama-grown Koshihikari rice flour, Hokkaido potato starch, and Toyama’s clean, pure water, I could confidently recommend it to gluten-free German friend. Only simple ingredients are used, so it’s pure. The fluffy, chewy texture melts in your mouth, offering a unique sensation that overseas visitors also enjoy.
Neat store interior
The store interior has a translucent, clean feel, reminiscent of water dumplings. Takeout water dumplings are sold near the register. They seemed popular, with many items sold out. On the opposite side, there’s also an eat-in space.

Tokichi, long established confectionery preserving Toyama Prefecture’s traditional flavors. When you visit Toyama, be sure to stop by.
