What is cold smoking!? I wondered, so I searched online and found it on the official page!
“Smoked foods are preserved foods that enhance shelf life and impart a distinctive flavor by exposing ingredients to smoke. Smoking methods are divided into three types based on the temperature range used: hot smoking, warm smoking, and cold smoking. ‘Cold smoking’ involves cooling the smoke generated from burning cherry wood chips to below 20°C. By applying this ‘cold smoke’, the surface is enveloped in the smoky aroma, while the interior of the ingredient is finished moist without adding excess heat.”
