The other day, I had the opportunity to show a friend from overseas around Ginza. Wanting them to experience authentic Japanese cuisine during their visit, I chose Umenohana Ginza Namiki-dori. This elegant restaurant specializes in healthy and delicate Japanese dishes, with a focus on tofu-based cuisine.

A quiet and serene atmosphere

As soon as we stepped inside, my friend was immediately struck by the peaceful ambiance. Despite being located in the heart of bustling Ginza, the restaurant felt like a tranquil retreat from the city. My friend was genuinely impressed, saying, “Japanese restaurants are so quiet and comfortable.”

The Star of the Meal: Freshly Made Yuba

One of the highlights at Umenohana is undoubtedly their dishes made with yuba (tofu skin) and tofu. Rich in the natural flavor of soybeans, these dishes are both healthy and easy to enjoy—making them especially popular with international guests.

The yuba, in particular, offers a unique dining experience. It’s freshly made right at your table, and my friend was absolutely fascinated. “I’ve never seen anything like this before!” they exclaimed, snapping photos as the delicate tofu skin was gently lifted from the warm soy milk. As long as there’s soy milk in the pot, you can keep making more yuba—an endless delight! Toward the end, the flavor of the soy becomes even richer, adding a satisfying finish to the experience.

A Seasonal Journey Through Japanese Cuisine

The multi-course meal at Umenohana changes with the seasons, offering a true taste of Japan’s natural rhythm. Each dish is beautifully presented, and every time a new plate arrived, my friend couldn’t help but exclaim, “Beautiful!”

From tofu shumai and yudofu (hot tofu in broth) to crispy fried yuba, every dish had a gentle, refined flavor. My friend was thoroughly impressed, saying, “Japanese food is so healthy and beautiful.” It was a perfect introduction to the elegance of washoku—and a big success!
